JOB DESCRIPTION
Prep Cook / Commis Chef
A Prep Cook/ Commisassists the Head Cook/Chef de Partie (Line Cook) with tasks related to meal preparation, maintenance, logistics, safety, and sanitation. As well as cooking, cleaning, delivery, and other support duties as instructed by the Kitchen Manager.
Essential Functions
The following list is not inclusive of additional responsibilities that the Kitchen Manager may request:
Friendly and with a wholesome disposition.
Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices.
Turn or stir foods to ensure even cooking.
Season and cook food according to recipes or personal judgment and experience.
Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
Portion, arrange, and garnish food, and serve food to waiters or patrons.
Regulate temperature of ovens, broilers, grills, and roasters.
• Substitute for or assist other cooks during emergencies or rush periods.Bake, roast, broil, and steam foods.
Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
Prep menu items in a fast and careful manner.
Estimate expected food consumption, requisition, purchase supplies or procure food from storage.
Carve and trim meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches.
Prepare sauces and Package orders.
Requirements:
§ High school diploma
§ 1-2 years of fine dining and hotel experience
§ Ability to stand for several hours and able to lift at least 20 lbs.
§ Ability to stay focused even in a fast-paced environment.
§ Communicate well in English and able to follow instructions.
§ Stress Management/Composure and Confidence.
§ Drive to help where needed and work as part of a team.

About The Role
The
Pastry Prep Cook 1
is responsible for preparing a variety of sweet items including pastries, cakes, ice creams, sorbets, fruit compotes, chocolates, and showpieces. This role ensures all items are made according to guest orders and banquet event orders, following production requirements and quality standards, while maintaining a safe and sanitary work environment.
What You Will Do
- Prepare pastry items of consistent quality following recipe cards, portion, and presentation standards.
- Start food items that are prepared ahead of time, ensuring not to exceed estimated needs.
- Operate, maintain, and properly clean kitchen equipment such as deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, and waffle iron.
- Date all food containers and rotate stock as per policies.
- Ensure perishables are stored at proper temperatures.
- Check pars for shift use and determine necessary preparation, freezer pull, and line setup.
- Note any out-of-stock items or possible shortages.
- Return unused food items to designated storage areas, ensuring proper covering and dating.
- Assist in setting up plans and actions to correct any food cost issues.
- Control food waste, loss, and usage according to policies.
- Collaborate with the Culinary Team on daily planning, ordering, and activities that impact guest satisfaction.
- Focus on taste and consistency when producing food or pastry for guests.
