Prepares meals in hot or cold kitchens, as assigned, on shift includes consulting menus, selecting row materials and ingredients and preparing food to required specifications and standards.
**Main Duties**
- Takes over from outgoing shift, check airline flight schedule to ascertain numbers and time for flights, receives advice regarding number of meal to be prepared (breakfast, lunches, dinners and snacks), and any requests of special meals (vegetarian, diabetic, salt-free, etc.).
- Consults specific airline menus, selected appropriate raw materials and prepares meals using the correct ingredients according to airline specifications.
- Allocates specific duties to Assistant Cooks and Kitchen Hands, such as preparing and slicing vegetables, cutting meats, preparing fruits, and ensuring that work is carried out as instructed.
- Prepares food for first class passengers in bulk and marks trays wrapped in aluminum foil with correct contents.
- Assists senior cooks in liaising with production clerk regarding late catering requirements and other special notices received. Includes co-coordinating the same with kitchen staff to ensure that such changes are met.
- Ensures the efficient and economic use of raw materials and supplies to achieve correct presentation and that wastage are reduced to minimum.
- Ensures that staff in the kitchen are properly attired and present a clean and tidy appearance at all time.
- Ensures that working area is clean and tidy at all times and that kitchen equipment is safe and in working order. Reports fault to supervisor for action.
- Carries out other similar or related duties, as assigned by supervisor.
